A taste map of the world's beers

In this experiment, typical beers from all over the world were selected to conduct an electronic tongue test on their taste. Since sour and bitter taste are important taste indicators of beer, scatter plots were established for comparison. It can be seen from the comparison below that Japanese Sapporo has a strong bitter taste, while British BASS PALEALE has a strong sour taste and strong irritation. Chinese Tsingtao beer also has a strong bitter taste, and Australian beer is also sour and irritating. The taste sensing system test can be used to distinguish the taste differences of different beers.

 

Japan's Insent taste sensing system (electronic tongue) uses an artificial lipid membrane sensor with wide area selection specificity to simulate the taste perception mechanism of living organisms. By detecting the change of membrane potential caused by electrostatic or hydrophobic interaction between various taste substances and artificial lipid membrane, it can evaluate five basic tastes (sourness, sweetness, bitterness, saltiness, Freshness) and astringency. No statistical analysis or modeling was required.

 

Nowadays, it has been widely used in the numerical evaluation of food taste and quality, and has also made outstanding contributions in the research of drug bitterness inhibition in beverages, alcohol, condiments, fruits and vegetables, meat products and other food fields.
